To be avoided on weekends! Way too expensive then... I'm traveling with a "digital nomad" so we stay in a city for 5-7 days at a time. Beppu is a great place to be for a week. Day trips to Yufuin, Oita. There is hiking. The food is amazing. I would recommend getting a place near the station. A fantastic little town, surprisingly so.
A fantastic little town, surprisingly so. Cradled by imposing mountains, and right by the sea, Beppu has managed to maintain a small-town feel. The city centre is so very Showa at first glance, but is riddled with hip little places for drink and food. Beppu is a nice town, with the central area (near Beppu station) filled with nice restaurants and shop, while the Northern area - where the famous Beppu's Hells are located, near Beppudaigaku station - is more residential. You should do the 7 Hells and see all the different natural hotsprings. I would also recommend trying the different onsens some had great views, others were very modern and luxurious, and some you could rent for a private experience. The food was good there as well. Driving is the most efficient way to get around as the buses can run infrequently going to certain areas or are just very long rides. I would also recommend taking the Sunflower Ferry Boat from Beppu to Osaka.
